Meat Free Meals

According to a report done by USA Today the average American ate 84.9 pounds of chicken, 63.5 pounds of beef, 48.2 pounds of pork, 17.5 pounds of turkey, and 1 pound of lamb/mutton in 2007. That means that the average person ate approximately 215 pounds of meat in 1 year!! Yes lean meat is good for you and a great source of protein and amino acids, but it is important to remember the rule "everything in moderation!". Looking at these numbers is doesn't seem like a bad idea to set one day aside a week for a meatless meal. Replacing the meat in a meal with vegetables and a plant based source of protein saves you a tone of calories, fat, and saturated fat! Check back each week for a new meatless meal!

Crockpot Mexican Chili
  • 1 15-oz can garbanzo beans
  • 1 15-oz can black beans
  • 1 24-oz jar of your favorite salsa
  • 2 tbsp chili powder (or more to taste)
  • 1 tbsp cumin
  • 1 cup water
  • 1 15-oz can Mexican-style corn (optional)
Directions:
Turn Crockpot on low heat. Drain corn and beans and mix all ingredients together in crockpot. Cover and cook 4-6 hours (depending on thickness you desire).
Notes: Adding the corn makes a nice accent on the black beans. Not only does this chili taste wonderful; it is pretty also!
Top with a dollop of plain Greek yogurt, chopped scallion, low-fat shredded cheddar cheese, or all 3!!
