Making Healthier choices and changing those negative habits is no easy feat!
Everybody enjoys eating comfort foods. Now you don't have to feel guilty after eating it. With a few simple changes you can eat guilt free without packing on the pounds. Who says you can't have your cake and eat it too?
“Fried” Chicken
Ingredients:
1 pound thinly sliced boneless skinless chicken breast
1⁄2 cup Light Italian dressing
1 cup garlic and herb seasoned bread crumbs
2 teaspoon Cajun spice (like the kind by McCormick Perfect Pinch)
Cooking spray
Directions:
Preheat oven to 350F. Cover a baking sheet with foil and lightly coat with cooking spray.
Mix bread crumbs and Cajun spice together. Pour Italian dressing into a bowl.
Dip each chicken breast in the Italian dressing and then into the bread crumb to completely coat.
Place the breaded chicken on to the baking sheet. Spray chicken lightly with cooking spray.
Bake for 15 minutes, turn chicken and bake an additional 15 minutes.
Mashed Potatoes
Ingredients:
1 large russet potato
3 cups frozen cauliflower
3 tbsp. fat-free half & half
1 tbsp. butter
1/4 tsp. salt
Pepper and additional salt, to taste
Directions:
Peel and cube potato. Bring a large pot of water to a boil. Place potato in the boiling water and cook about 12 – 15 minutes until the potato is very tender. Meanwhile heat frozen cauliflower in a large microwave save bowl.
Strain all water from potato and cauliflower and transfer both into one large mixing bowl. Add half & half, butter, and salt
to bowl and mash with a potato masher or hand mixer on low until smooth and completely mixed. Add additional salt and pepper to taste.
Greens
Ingredients:
1 large bag of fresh green beans (like the kind you can steam in the bag)
1 Tablespoon butter
3 Slices center cut bacon (this is the leanest cut of bacon) cooked crispy
1⁄2 teaspoon adobe seasoning
1⁄2 teaspoon garlic powder
Directions:
Cook bacon until it is crisp and place on a paper towel to al- low grease to drain. Set aside to cool.
Steam green beans, either in bag or on the stove until fork tender. When bacon is cool enough to handle crumble into small pieces.
Mix bacon, green beans, and butter together. Sprinkle with adobe season and garlic powder.
Peach Cobbler
Ingredients:
1 package vanilla cake mix
1 can plain seltzer water
5 very ripe peaches
1 teaspoon cinnamon
2 tablespoons sugar
Butter flavored cooking spray
Directions:
Preheat oven according to cake package instructions.
Mix cake mix with can of seltzer and stir until smooth and uniform.
Slice peaches and mix with sugar and cinnamon.
Coat a 9 by 12 cake pan with cooking spray. Spread peaches to cover bottom of cake pan, pour cake batter evenly over peaches.
Bake according to cake package instructions.
Top each serving with 1⁄4 cup fat free or light vanilla ice cream (like Edy’s slow churned light!)
